This bread was super rich and delicious! It has an unbeatable crunch while still sweet. Although, you can take it up a notch and use this bread to make some mouth-watering French toast!

Sourdough Cinnamon Raisin Bread
This makes for some delicious bread or even better French Toast!
Ingredients
- Dough -
- 75 grams Active Sourdough starter
- 350 grams Water
- 480 grams Organic Bread Flour
- 35 grams Organic Whole Wheat Flour
- 10 grams fine Pink Himalayan Salt
- 120 grams Raisins
- Filling -
- 50 grams Organic Brown Sugar
- 5 grams Organic Cinnamon
Instructions
1. Soak the raisins in some water.
2. Measure out all other ingredients (except filling) and use your hands to knead this dough together (it will be 'shaggy' and not totally smooth).
3. After 45 minutes, drain the raisins and add to the top of your bread dough. Start stretch and folds to knead the raisins into the dough. After doing this for a minute, place towel over the bowl and let the dough rest.
4. Come back to do more stretch and folds every 15 minutes or so 3-4 more times. Then allow the dough to rise for a bulk rise 6-8 hours.
5. Remove the dough and roll out onto a floured surface. Once into a rectangular shape, mix filling and spread across the dough surface.
6. Roll up the dough and place into a sprayed loaf pan with the seam downward.
7. Cover with a towel and allow a second rise for 2-6 hours.
8. After the rise, preheat the oven to 400 degrees and bake for 40 minutes or until golden brown on the top.
9. Allow to cool completely before slicing. Enjoy!
